Pam Edwards is a busy mom of a blended family. But, she does her best to balance work and home. Edwards’s home life and work life is filled with excitement. Her home is full of teenagers, four girls and one boy to be exact. 

“I have been married to my husband Gray for  eight years, and we have five children between us.” said Edwards. “I have two girls, Kara Spears and Kalli Spears, and he has one son, Ashton Edwards, and two girls Harley Edwards and Kay-Leigh Hill.” 

Edwards has one daughter going off to college this fall, but the three youngest are getting adjusted to their “new normal” as school starts back.

“The kids are eating lunch in the classroom, and getting to lower their mask to eat,” Edwards said. 

Edwards works for Shelter Howell-Insurance for just over a year now. She recently got a promotion as the Office Manager. Pam also got a license in property and casualty insurance. Before she started working at Shelter Howell-Insurance, she was the bookkeeper at Stribling’s Drug Store.  

“I still help out the pharmacy when they’re in a bind.” said Edwards. 

She also can be found on the weekends at Nance’s Shortstop. Her husband is a truck driver, which requires early morning wake-ups. 

“I’m usually up before everyone and possibly the last to go to bed.” she said. 

Even though Pam lives in a house full of girls, she doesn’t have much help in the kitchen. Her cooking style can go from baked salmon and roasted veggies one night too sloppy joes and Cheetos the next.

Pam’s youngest daughter Kalli is her pickiest eater. 

“If she doesn’t like what I cook for dinner, she will more than likely grab a snack from the pantry and be happy with that,” Edwards said. 

She enjoys having her family get together at her house to play card games such as spades and eat. Pam is also the griller at her house. Her home is the gathering place for all her teens and their friends also. Edwards never knows how many mouths she may have to feed, but she wouldn’t have it any other way.. 

CHICKEN RICE-A-RONI

CASSEROLE

3-4 cups cooked chicken 

1 box chicken flavored rice-a-roni

1 can cream of broccoli soup

1 cup shredded cheese

1 package Frenchs fried onions 

1 cup sour cream

Cook rice-a-roni according to the package directions. Then add in chicken, broccoli soup, shredded cheese, sour cream, and half of the fried onions mix together well and pour into a 9x13 casserole dish bake at 350 for 20 minutes top with reserved fried onions and bake another 10 minutes

SUMMER FRUIT SALAD

1 can peach pie filling 

1 can pineapple chunks 

1 can mandarin oranges

1 large container of frozen strawberries 

2-3 bananas 

Mix first four ingredients together and chill in fridge. Thirty Minutes before serving slice and add bananas, serve cold. 

EASY BREAKFAST

CASSEROLE 

1 LB ground sausage 

1 block cream cheese 

1 package crescent rolls 

8 eggs 

1/8 cup milk 

1 cup shredded cheese 

6 pieces of bacon (cooked and crumbled) 

Line Casserole dish with crescents, pinch together seams to form crust, brown sausage and add in cream cheese, mix together well, and place on top of crescent rolls and milk, fold in shredded cheese and pour mixture over sausage.Top with crumbled bacon. Bake at 350 for 30 minutes.
