Spears enjoys taking family horses to Fairgrounds

Dawn Spears is the wife of Bobby Spears and they have been married for more than 30 years and have a daughter and a son. 

Spears has been with Yates since she was in high school three decades ago where she has worked with her two sisters, Renee Glass and Christy Smith. 

Dawn Spears is the daughter of Gene and Frances Johnson, who have been married for 56 years. Her parents are enjoying being retired.

Dawn and Bobby Spears have four grandchildren who enjoy spending their time tending to their little critters, playing outside, and helping with the horses. 

The family races horses at the Neshoba County Fair and is looking forward to the 2021 Fair. 

In her free time, Spears and her family like to take the horses to the Fairgrounds. 

She also likes baking and spending time with her family. Baking for spears is a way to clear her head in this busy world. 

As a child growing up Spears would watch her mother cook and bake in the kitchen. 

The family also gets together for lunches every week, which is a great opportunity to prepare food.

Her mom showed her the ways around the kitchen. Spear's favorite thing her mom makes is homemade biscuits and chicken dressing. 

Spears got her cooking reputation from her mother and is even famous for her delicious cakes at Yates employee parities.

Spears has been baking her whole life, she likes all types of food, but her favorite thing to cook is something sweet. 

Baking is what makes Dawn Spears the queen of baking. All her recipes have been passed down from her family, and she sometimes gets in the kitchen to make her creative cakes and sweets. 

  

FRIED VENISON STEAK

1 egg 

1 cup of milk 

Salt and pepper to taste (or other seasoning of choosing) 

Flour 

Oil 

Venison Steaks (tenderized) 

Heat oil. Mix egg and milk together well. Mix egg and milk together well. Season steak. Dip steaks into egg and milk mixture then dip in flour. Fry in oil. 

MISSISSIPPI ROAST 

Roast of meat of your choosing 

Au Jus gravy mix 

Ranch Dressing 

Stick of butter 

Pepperoncini peppers 

For the Instapot: 

Close the lid and set the steam release knob to stealing position. Press the Pressure Cook or Manual button then +/- button to select 60 minutes. High pressure. When the cooking cycle ends, let the pot sit undisturbed and count up to 15 minutes (natural pressure release). After 15 minute NPR, turn off the off the pot and the manually release the remaining pressure by turning the steam release knob to the venting position. When the pin in the lid drops back down, open the lid 

WHITE CAKE 

1-15.25-ounce white cake mix 

1 cup all-purpose flour 

1 cup granulated white sugar 

¾ tsp salt 

1 1/3 cups water 

2 tbsp oil 

1 tsp vanilla 

1 cup sour cream 

4 large eggs whites 

Preheat oven to 325. Grease and flour three 9-inch round pans. In a large bowl, whisk together cake mix flour, sugar and salt. Add the remaining ingredients and beat with mixer for 2 minutes or until well blended. Divide the batter evenly between the prepared pans. Be sure to fill them ¾ to 1 inch below the top of the pan. Bake 35 to 45 minutes or until toothpick inserted into center come out clean. Let the cakes cool in the pans for a few minutes and then turn out onto cooling racks to cool completely before frosting. 

Cream cheese frosting: 

1 stick butter, room temp 

1 tsp vanilla 

1 8 0z cream cheese room temperature 

1 bag of powdered sugar 

(Cream butter, vanilla, and cream cheese. Gradually add powdered sugar.
