Thanksgiving holidays mark the beginning of an annual tradition for Mack and Sherry Alford. They eagerly await the arrival of their daughter, Jennifer Alford Walker, and her husband, Glen Walker, with their children, Emily, Joseph, and Grace, to begin cooking molasses at the Alford Syrup Mill on Fork Road.

Mack plants the sugar cane in the spring and tends to it all summer until fall when it is ripe and ready to cut. The molasses making process is fascinating to watch, from the grinding of the cane using a tractor, to boiling the juice in a huge cauldron over an open fire in a brick fire pit, down to pouring the molasses into sterilized jars and capping them. The sweet aroma of molasses permeates the air and makes ones mouth water. The green juice boils and bubbles merrily over the hot flames and gradually turns into brown molasses.

The syrup mill is clean and quiet, waiting for the next round of molasses cooking, but the Walkers will be back in Macon after their week in Mississippi, looking forward to their return at Christmas!
