Busy mom enjoys quick dinner recipes

In Kelly Copeland’s free time she enjoys walking and listening to worship music. But her favorite thing to do is spending time outside with her family.  

She is originally from the Sebastopol area and graduated from Sebastopol High School in 2004.  After graduating, Copeland married her husband Justin in 2005 and moved to Philadelphia. In 2007, she graduated from LPN school at East Central Community College. She continued on and completed the associates degree nursing program. 

Copeland is currently employed at Anderson Family Medical Clinic-Airpark where she is a registered nurse. 

“I have worked there for three years and truly love being a nurse and caring for other. It also makes the day the day go by a lot easier when you work with people who are like a second family.” said Copeland. 

The last couple of months have been a bit stressful for Copeland. So having coworkers who she considers her work family that she can depend on means a lot. 

Kelly is also the mother of two boys, Brody, 10, and two-year-old Jase. Brody will be in 5th grade this year at Neshoba Central. Jase attends First United Methodist Daycare. 

Kelly is a member of Sandtown United Methodist Church where she a part of the worship team and also leads worship. She is extremely passionate about her faith in God and she loved fellowshipping with her church family and leading others in worship. 

“I started singing in the church where I grew up when I was about five years old, so it has always been a hobby of mine.” Copeland said. 

When Copeland was first married she never really cooked.  “I learned real quick that I better learn to cook some, so I slowly started cooking more.” she said. 

Copeland is fan of easy and fast recipes that do not require many ingredients. Copeland stays busy raising her children and working full-time that these types of recipes help with easy and quick meals.

ICE CREAM SANDWICH CAKE 

24 vanilla ice cream sandwiches, unwrapped 

2 (8 ounce) containers whipped topping (such as Cool Whip), thawed 

1 (12 ounce) jar hot fudge ice cream topping, warmed

1 (12 ounce) jar caramel ice cream topping 

Arrange a layer of ice cream sandwiches in the bottom of a 9x13-inch dish; top with a layer of whipped topping, hot fudge topping, and caramel topping. Repeat layering with remaining ice cream sandwiches, whipped topping, hot fudge topping, and caramel topping, ending with a top layer of whipped topping. Cover dish with aluminum foil and freeze until set, at least 30 minutes. 

EASY SLIDERS

1 (12 count) package Hawaiian sweet rolls

1 (6 ounce) package thinly sliced deli meat (ham/roast beef)

1 pack of Swiss cheese

1/2 cup butter

1 tablespoon poppy seeds

2 teaspoons Worcestershire sauce 

1/4 tsp of salt 

A pinch of garlic powder

Step 1

Preheat the over to 350 degrees. Line a 9-inch square baking pan with aluminum foil and spray with cooking spray. 

Step 2 

Slice rolls in half keeping rolls connect, into a bottom and top ’slab.’ Place bottom slab in the prepared pan. 

Step 3

Layer about half the ham (or whatever deli meat you choose) evenly over the bottom slab of rolls. Layer Swiss cheese evenly on top, and arrange remaining deli meat over the cheese. Cover the top slab. 

Step 4 

Place butter in a microwave-safe bowl. Heat in the microwave until melted, about 1 minute. Add a pinch of garlic powder, poppy seeds, Worcestershire sauce, and salt. Whisk to combine. 

Step 5 

Pour butter mixture evenly and slowly over the rolls. Spread over the tops using a spatula; some of the mixture will pool at the bottom of the rolls. Cover with aluminum foil and let stand at room temperature for 5 to 10 minutes. 

Step 6 

Bake in the preheated oven until cheese has melted, about 20 minutes. Uncover and continue baking until browned as desired, 30 to 5 minutes more. Slice into individual sliders. 

Brody’s Dorito Salad 

1 bag of Doritos Nacho Cheese Chips 

1 pound hamburger meat

1 packet of taco seasoning 

 Brown hamburger meat in skillet and drain, then add taco seasoning and cook as directed on packet. Crumbled desired amount of Doritos on plate, then add taco seasoned hamburger meat. Top with shredded cheese, sour cream, lettuce, and taco sauce.
